Quick and Unusual Cottage Salad

Quick and Unusual Cottage Salad lives up to its name. Cottage cheese gets mixed with dry orange gelatin, pineapple, Mandarin oranges, and whipped topping, then chilled until firm—but not quite firm enough to become one of those ambitious molded salads. The handwritten recipe also invites plenty of experimenting with different gelatin flavors and fruits, so “unusual” can go in just about any direction.

1 small carton of cottage cheese (small curd)
1 3oz. pkg. orange gelatin (or other flavor)
1 small can crushed pineapple, drained
1 can Mandarin oranges, drained (fruit cocktail works)
1/4 tsp. pineapple flavoring
1 small pkg. whipped topping or Cool Whip.

Sprinkle dry gelatin over cottage cheese
Stir to dissolve.

Add well drained fruits, flavoring, and whipped topping (or Cool Whip, which has been prepared according to directions).
Spoon into pretty bowl and refrigerate until time to serve.
The salad becomes firm, but not hard enough to turn out as molded salad.

Different flavored gelatins, fruit flavorings, and any fruit desired may be used.
