Billie’s Angel Food System

This vintage angel food cake note shares a simple “system” for making a tall, light angel food cake with careful mixing and baking instructions handwritten directly on the card. Recipe reminders like this were often passed between experienced bakers who already knew the full ingredient list by heart and only needed the key steps for success.

1. Beat egg whites at top speed 15 (20) or (25) min.
2. Bake 1 hr. at 325°
Recommend blending in flour by spatula
Makes very high cake.
