Shortbread Lemon Squares

This Lemon Squares recipe was written right on an envelope, with the shortbread crust on one side of a red line and the lemon topping on the other. The crust gets its first trip through the oven while the topping is mixed, then everything goes back in together for a bright, lemony layer over the shortbread base. Let them cool before cutting into squares

Buttery shortbread topped with a bright, lemony almost-custard layer—this handwritten Lemon Squares recipe turns a handful of simple ingredients into something worth waiting to cool before cutting.

Step One

1 cup flour
1/2″ butter cubed
1/4″ powdered sugar
{Mix & press into bottom of 8×8 pan.
Bake 350°}

While this is baking mix ingredients at left.

½ tbsp flour
½ tsp baking powder
2 tbsp lemon juice + ½ tbsp grated rind

Pour this over shortbread & bake 30 min at 350°.
