This one from Andrine survived on a torn little scrap of paper, with the ingredients tucked wherever there was room and the baking directions squeezed in at the bottom. With plenty of ripe banana, shortening and eggs, it should bake into a moist, tender cake with a richer crumb than a typical sponge-style cake. There aren’t many instructions left behind, but Andrine did make sure to give us the important part: 375° for 25 minutes.
2¼ cups sifted flour

2½ tsp baking powder
½ tsp baking soda
½ tsp salt
½ cup soft shortening
