Mrs. T’s Oatmeal Cookies are old-fashioned refrigerator cookies made with quick oats, brown and white sugar and chopped nuts. The dough is formed into rolls, chilled well, then sliced thin and baked in a moderate oven. A handwritten note alongside the shortening calls for using ¼ pound of butter and filling the rest of the cup with shortening.
1 c shortening
{1/4 lb. butter —
fill cup with
other shortening}
1 c brown sugar
1 c white sugar
2 beaten eggs
1 tsp vanilla
1 1/2 c sifted flour
1 tsp salt
1 tsp soda
3 c quick oats
1/2 c chopped nuts
Mix well; form rolls; chill
well in refrigerator; slice
1/4 inch thick and bake in
moderate oven.
